Rah-rah Raw Carrot Cake Balls!

So I stumbled across this recipe on my favorite clean eating website iFoodReal.  I didn’t have high hopes for it because this required all raw ingredients and nothing but a freezer and double-boiler (optional).  I gave it whack anyways and was absolutely blown away by how amazing these balls were!  I kid you not, they taste exactly like carrot cake and are so simple to make.  I even made them with my Iron Maidens class and they were really into them as well!  You can add the dark chocolate drizzle for a lil extra sweetness as well, and even that is less than 1/2 a square of dark chocolate so it won’t hurt ya.


Rah-rah Raw Carrot Cake Balls


1/2 cup raw almond butter

1 cup finely shredded/chopped carrots

1/4 cup rolled oats

1/4 cup unsweetened shredded coconut

1/4 cup raisins

1 Tbsp honey

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

pinch of salt

4 squares dark chocolate (70% cacao or higher-the higher the better) or 2-3 Tbsp dark   chocolate chips

1 teaspoon unrefined coconut oil (it has a more coconutty flavor)


  1. In a medium bowl, combine all ingredients except chocolate and coconut oil until a dough consistency is formed.
  2. Roll mixture into golfball-sized portions and place on a parchment paper-lined sheet pan.  Freeze for 30 minutes.
  3. If opting in for the chocolate drizzle, and you totally should, use a double-boiler or microwave to melt the chocolate and coconut oil together.  Drizzle a small amount over each frozen ball and let chocolate harden.
  4. Before enjoying, it is best to let the balls soften up for about 5 minutes.
  5. Enjoy them balls!
