Whole 30 – Day One

Day One is in the books.  It wasn’t bad at all.  I woke up, had my two coffees with canned coconut milk, played with the baby, and read my book.  I had my first actual food around 12pm.  I’m trying to also incorporate intermittent fasting with this new eating project.  Unless I’m going to the gym early in the morning or late at night, I plan on eating  (coffee excluded, because I’m not that nuts) between the hours of 12pm to 8pm.  Yup, I only give myself 8 hours to eat.  This nixes any mindless midnight snacking.  On my daily Whole 30 posts, I’ll be providing recipes to give some ideas for meals on Whole 30.

Morning Coffee

2 mugs of ground coffee, each with 1/4 cup-ish of Trader Joe’s Organic Coconut Milk.

Breakfast/Lunch (12pm)

3 eggs scrambled with 1 teaspoon of ghee

1 cup steamed garlic and broccoli

5 baby white potatoes with garlic, salt, and pepper

Snack (2pm, 4pm, 8pm)

1 Cashew Cookie Larabar

20 baby carrots

medium D’anjou pear

Dinner (6pm)

green beans sautéed with coconut oil, garam masala, red chili powder, and slivered almonds

You-Know-You’re-Old-When-You-Make Balsamic Pot Roast

1 big ol’ chuck, brisket, or round hunk of beef

3 big squirts of dijon mustard

1 Tablespoon ginger paste

1 Tablespoon garlic paste

1/4 cup coconut aminos

1/2 cup balsamic vinegar

salt and pepper sprinklins’

Whisk together everything but the roast and onions.  Cook in slow cooker with beef,   onions, and a bit of water for 6 hours-ish, depending on the heat level.  Shred with fork or your bare savage hands!

I need to rest during the day if baby V. wakes up a lot during the night or else I’ll be pretty tired.  Food-wise, it was easy.  I threw out all my non-compliant food because I don’t plan on touching it for the next 30 days and don’t even want it around as a temptation.  That pot roast was friggin’ delicious!
