I made this during my second week of Whole30. It’s super tasty, and while it would taste even better over some brown rice, it tasted super yummy on its own and is just full of veggies!
1lb ground beef
1 16oz. bag fresh Cole slaw mix (shredded cabbage and carrots – no dressing)
1 medium thinly sliced white or yellow onion
1/4 organic coconut aminos (Trader Joe’s has these on the cheap!)
2 Tablespoons rice wine vinegar
1 Tablespoon avocado oil
1/2 teaspoon crushed red pepper
4 cloves finely chopped garlic
1 teaspoon finely chopped ginger
salt and pepper to taste
In large sauté pan, brown ground beef and drain. Add in oil, onion, garlic, ginger, red pepper, coconut aminos, and vinegar. Cook over medium heat until onions start to get a liiiiitle bit soft, but not too much! Toss in Cole slaw mix and cook over med-high heat for a few minutes until Cole slaw mix barely begins to wilt. Best if eaten with chopsticks!
